THE FAMOUS BRAAI BROODJIE

If you've never made one of these on the braai, you're not a 100 percent Suid-Afrikaner!
And I have never made one on the braai, Eish!
But I have seen how it's done, and so now I am totally equipped to throw one on the grid next time...
Let's do this thing!
WHAT DO YOU NEED?
You need you braai, haha, but that's not all - you will need a hinged double braai grid, the ones that open up and have a longish handle. You're going to put your broodjie in here so it stays in one place.
Next you need your bread. Using normal sliced bread is not recommended, it's too thin. Try thicker sliced bread or, even better, yummy mielie brood or paninis, or even burger buns.
Then it's ingredients time, and here anything goes, whatever you want on your toastie is good enough; last night's dinner leftovers chopped up is a good start. Just beware of making your sandwich too soggy with too-soft tomatoes or too much mayo.
Basically, just make your broodjie like you normally would, and if you want, you can butter the outsides too.
It's time to braai - place your broodjies in the hinged grid and pop them on to the braai grid, on coals that have mellowed a bit. Turn regularly to prevent burning, remove when done, slice them and place on your plate with some accompaniments, like a salad or french fries or a handful of Simba chips...and a good draft!
If you're a little afraid your cheese is going to melt all over the place, then wrap each broodjie in tin foil before braaiing, checking now and then to see when they're ready.
Smarten them up. Try serving the broodjies in nice bowls, sliced into quarters (the broodjies, not the bowls), with your added salad or chips, a sprinkling of parsley, and a serviette - your family will feel super spoilt.

THE PIZZA BRAAI BROODJIE
If you're the go-to chef in your caravan park's one mile radius, and you find new friends flocking to your tent like shrimp-starved flamingos, then consider making a pizza broodjie!
"How do I do this?" you ask.
Buy two frozen pizza bases. Add your ingredients to one pizza base and cover with the other. Wrap in tin foil and braai the same way in the hinged grid. Then you can cut it up into eight slices and feed the hungry.
You could use ready made frozen pizza like Margherita or Hawaiian etc, if you're in the mood for those extra ingredients.
No matter how you pack 'em and braai 'em, just sit and relax and enjoy your meal with your family and friends.
